Scrumptious Holiday Cookies that are EASY!!!


This recipe is so easy and lavishly cheap!

It's a treat with a little bit of a healthy kick to it (but doesn't taste like a healthy treat).


Chocolate Chip Spiced Cookies

1 box of carrot cake mix

1 egg

1/2 cup of vegetable oil

1/3 cup oat bran (can substitute with oatmeal)

1 cup crushed pineapple (light on the juice)

1 cup of chocolate chips.

Preheat oven to 375 degrees.

Combine all ingredients in a mixing bowl and beat on high for 2 to three minutes. Spoon on greased cookie sheet and bake for 8 to 10 minutes.

For cake like cookies remove immediately. For crunchy cookies, turn off oven after 8 to 10 minutes and allow them to stay in the warm oven until it cools off.

This recipe is fabulous, there is very little mess, and it's super easy! No one will know they have oat bran!
